Easy and Healthy Chicken for your breakfast

Hello folks!

Today I want to share a very easy and very healthy recipe I got from a colleague. If you want to have a nice healthy chicken for your breakfast and don't want to spend too much time for such meal this recipe is definetely for you!
All you need is a chicken breast fillet (I usually cook two thus I don't need to think about my breakfast for almost the whole working week), your favorite spices and an vegetable oil (I use corn oil but you can use any you like). So you spread your favorite spices and salt (on your taste) over the chicken fillet, then add 1 table spoon of the vegatable oil and leave the chicken fillet for about 30min - 1 hour to marinate. To save time I always leave the chicken in the same pan I'll put into an oven. When the chicken is marinated you need to put it into the preheat oven (around 180-200 C) for 15 minutes. After 15 minutes all you need is to turn the oven off and leave your chicken there for next 4 hours. After 4 hours take the chicken, slice it and use for sandwiches with whatever you want and like.
My little secret - I cook the chicken in the evening and leave the chicken in the oven till next morning so no need to wait 4 hours ))))

Very healthy Spaghetti with zucchini

Hello everyone! I love spaghetti! I just can't help loving it! But they can be very healthy!!!!

So we need:
spaghetti
olive oil
zucchini
garlic
cherry tomatos
black pepper
salt

How to cook - I'm sure you know how to boil spaghetti if not you can read the manual on the pack )))

While your spaghetti will be boiling you need to heat up olive oil in the pan and put garlic (you have to chop it) and black pepper. Also you have to cut the zucchini - use a knife you use to remove a peel off. Thus you'll get long and thin stripes of the zucchini. Add them to the pan and boil a little. You also have to add some water from the pan with spaghetti. It'll take no more than 10 min. At the end add some cherry tomatos. Thus you'll have amazing healthy mix )))

When you spaghetty will be ready you just need to mix them with zucchini. That's it! Your healthy spaghetti is ready and it took not a whole day! )))

Dilemma: Almond cakes or almond macaroons?

Almond cakes and almond macaroons are pretty similar as you use same ingredients but a different way of cooking. So we need:
4 eggwhites
200 gr sugar - make the icing sugar from this sugar
150 gr ground almonds


Almond macaroons

 Preheat the oven to 160°C/fan140°C/gas 3.
 Whizz the icing sugar and ground almonds in a food processor to a very fine mixture
  Using an electric mixer, whisk the egg whites with a pinch of salt to soft peaks, then gradually whisk in the caster sugar until thick and glossy.
 Fold half the almond and icing sugar mixture into the meringue and mix well. Add the remaining half, making sure you use a spatula to cut and fold the mixture until it is shiny and has a thick, ribbon-like consistency as it falls from the spatula. Spoon into a piping bag fitted with a 1cm plain nozzle.
Line 2 baking sheets with baking paper. Pipe small rounds of the macaroon mixture, about 3cm across, onto the baking sheets. Give the baking sheets a sharp tap on the work surface to ensure a good ‘foot’. Leave to stand at room temperature for 10-15 minutes to form a slight skin. This is important – you should be able to touch them lightly without any mixture sticking to your finger. Bake for 15 minutes. Remove from the oven and cool.
Then you need chocolate cream to combine macaroons together. For cream you need:
150 gr dark chocolate
30 gr butter
200 ml 20% cream
You need to warm up the cream, add chocolate and butter and mix it. After the chocolate cream became cool you can use it to sandwich pairs of macaroons together.

 
Almond cakes

This recipe is a bit easier )))
 Preheat the oven to 160°C/fan140°C/gas 3.
Mix ground almonds and the icing sugar together, add 1 table spoon of eggwhie and start to mash. Add more eggwhites gradually. The general idea is don't use an electric mixer! You don't have to make foam from eggwhites. After you mash all ingredients pretty well line 2 baking sheets with baking paper. It's up to you which size of almond cakes you wanna have )) Bake for 10-15 minutes. Remove from the oven and cool. To remove cakes from the baking paper you have to wet the back surface and you remove your cakes easily!

I don't like only one thing about this cakes and macaroons - they melt away toooo quick!

Almond cakes from my childhood

When I was a child, me and my father went to theatres pretty often and he always bought me almond cakes with some juice due an intermission. I don't know why bit it's pretty hard to find the same taste nowadays. But today I was trying a recipe from a pretty coog cooking book and the taste of these almond cookies is the same!

Pizza Pizza Pizza!!!!!!

I just love Pizza!!!!! The reason - it's pretty simple to cook and you can use almost everything you have in your fridge! So today I'm sharing my favorite recipe of perfect thin Italian pizza.

175 gr flour
1/4 tea spoon salt
1 tea spoon yeast
125ml warm water
1 table spoon olive oil


Mix flour, salt and yeast. Mix warm water with olive oil, add to dry ingredients and knead a flat dough. Put the dough on a table and knead 2-3 minutes. Put the dough into a bowl and let it in a warm place for 40 minutes. Than knead the dough for 1-2 minutes and roll into a circle. Put the pizza on a baking tray and fill with your favorite ingredients.Your pizza will be ready after 15-20 min (180 C)

Small advice - add cheese only after your pizza will be ready thereby your pizza will not be soggy.

Meatloaf or American style

Why American style? I think it looks such an American as you use ketchup and Tabasco.

  • Meatloaf:
  • 1 cup Whole Milk
  • 6 slices White Bread
  • 2 pounds Ground Beef
  • 1 cup (heaping) Freshly Grated Parmesan Cheese
  • ¼ teaspoons Seasoned Salt
  • ¾ teaspoons Salt
  • Freshly Ground Black Pepper
  • ⅓ cups Minced Flat-leaf Parsley
  • 4 whole Eggs Beaten
  • 1 big Onion
  • 10 slices Thin/regular Bacon

  • Sauce:
  • 1-½ cup Ketchup
  • ⅓ cups Brown Sugar
  • 1 teaspoon Dry Mustard
  • Tabasco To Taste
Preheat oven to 250-280 degrees. Pour milk over the bread slices. Allow it to soak in for several minutes.
Place the ground beef, milk-soaked bread, Parmesan (if you don't have Parmesan you can use any cheese you have in your fridge), chopped oinion, seasoned salt, salt, black pepper, and chopped parsley in a large mixing bowl. Pour in beaten eggs.


Mix the ingredients until well combined. Form the mixture into a loaf shape on a broiler pan, which will allow the fat to drain.

Lay bacon slices over the top, tucking them underneath the meatloaf. 

Make the sauce: add ketchup, brown sugar, mustard, and hot sauce in a mixing bowl. Stir together. Pour 1/3 of the mixture over the top of the bacon. Spread with a spoon.
Bake for 45 minutes, then pour another 1/3 of the sauce over the top. Bake for another 15 minutes. Slice and serve with remaining sauce.

Curd (cottage cheese) pie

Here is two ways to cook this pie - with or without a meringue. That's up to you as both ways are simple and tasty ))) If you prefer the pie without the meringue you can use egg white for cook macaroons.

1 cup flour (my cup is about 160 gr)
1 tea spoon soda or baking powder (I use lemon to slake soda)
80 gr butter
2 table spoons sugar
1 egg yellow
vanilla (I use vanilla sugar)
1-2 table spoon cold water

500 gr curd (cottage cheese) (no less than 9%)
0.5 cup sugar (about 125 gr sugar)
100 gr sour cream (I use 20%)
3 eggs yellow
1,5 table spoon semolina
vanilla (I use vanilla sugar)
lemon zest

Meringue:
3 eggs white
5 table spoons sugar powder (I use less maybe 2-3)

Cut butter with flour, baking powder and sugar. Add egg yellow, cold water and knead dough fast. Than put it into a fridge for 30 min. 
Mix well curd, sour cream, eggs yellow, sugar, vanilla, lemon zest, semolina.
Preheat an oven to 180 C. Grease a baking pan by butter and powder with flour. Roll out the paste, put into the baking pan, stub the paste by fork and bake 5 min. Than put the curd mass above paste and bake about 30 min (170 C).
Whip egg white with sugar into a froth. Put the meringue above curd mass and bake 10-15 min (120 C)

If you don't use meringue you can add some chocolate above the curd mass when the pie will be ready - you can use a chocolate cream (100 gr dark chocolate, 20 gr butter and 100 ml cream 33%) or just rub some chocolate on the surface.

My craft space for today

Well I have two craft spaces - one in front of my comp ))) just because I can't move the comp somewhere else ))) and on a kitchen. And as I created new earrings yesterday and didn't have an inspiration to create more jewelry today I've spent some time on the kitchen and changed a recipe I've read on my favorite forum Turkey-info. In the original recipe you have to use a jam but I've just cutted apples to small pieces, added sugar and that's it! The filling is ready!

Tasty ugly macaroons

I did it! I've defeated them! Macaroons! Well that's a pretty short story ))) I just wanted to cook them and on the first time they weren't as they had to be. I even wasn't be able to take all of them off the baking tray ))) but this time I did it!!!!! And who cares that they don't look as fashion as they could look in some cooking magazines and sites? I don't care as they are absolutely amazingly tasty and even on the photo you can't see all of them as some of them are gone already )))) So who cares about fashion look when you have something that was made with love!

Summertime

Here is about -10 and they say next week will be maybe -20!!! We will see )))
But right now I'm thinking about summer time as it was unbelievable hot summer here in Moscow this year! And this summer I found very nice recipe that I want to share with you. An amazing plum cobbler! You also can make cherry cobbler if you want as it'll be the same delicious one!

Plum cobbler
   So we need
750 gram plums, without stones or 750 gram cherries without stones
1/2 cup of sugar
1 tablespoon of lemon juice
Cherry cobbler
1 tablespoon of  starch
1 cup of a flour
1 tablespoon of sugar
1 1/2 tea spoon of baking powder
Salt pinch
60 gramm of cold butter
3/4 cup of buttermilk or kefir
1 egg

750 г слив без косточек или вишни без косточек
1/2 ст. сахара
1 ст. л. лимонного сока
1 ст.л. крахмала
1 ст. муки
1 ст.л. сахара

1 1/2 ч.л. соды гашеной лимонным соком
щепотка соли
60 г холодного сл. масла
3/4 ст. простокваши или кефира 

1 яйцо

1) Preheat oven to 350°F (175°C)
2) Mix plums (or cherries) with sugar, lemon juice and starch. Put on a bottom of fire-resistant ware.
3) Mix  a flour, sugar, a baking powder, soda and salt in deep ware.
4) Cut butter into cubes and grind to big crumbs with flour by using two knifes or a blender.
5) Pour buttermilk and knead by fork to a dense sticky pastry.
6) Cover plums by the pastry. Grease a surface with egg and to bake 40-50 minutes

Разогреть духовку до 170С.
Смешать сливы с сахаром, лимонным соком и крахмалом. Выложить на дно огнеупорной посуды для выпечки.
Просеять в глубокую посуду муку, сахар, разрыхлитель, соду и соль.
Нарезать масло кубиками и растереть в крупную крошку с мукой (используя два ножа или блендер).
Влить простоквашу и размешать вилкой до образования густого и липкого теста. Выложить его ложкой поверх слив. Смазать поверхность яйцом и выпекать 40-50 мин, пока не появится румяная корочка и сливы станут мягкими.
